Nose
Vanilla bean, apple butter, dark jam with rum cake characteristics. Savory with darker fruits, not overpowering ethanol despite the proof. A little bit of spice.
Palate
Dry date and Turkish fig sweetness masked by darker fruit. Oatmeal raisin cookie with lots of raisins, ginger snap cookie with slight burnt aspect. Cinnamon and cooking spices. Very viscous and creamy for 100 proof with a white pepper spice.
Finish
Medium to long, lingering finish with the viscous nature keeping the drinker coming back. Hug of rye spice playing through without being overpowering.
